3 oz. neufchatel cheese
2 T. white sugar
3 T. low fat milk
2 C. frozen fat free whipped topping, thawed
1 tsp. vanilla extract
In a mixing bowl, combine the cheese, sugar and milk. Mix thoroughly until well blended and smooth. Gently combine the frozen fat free topping and vanilla with the mixture. Serve chilled with cinnamon sugar pita chips such as Stacy's to scoop.

Hot Suasage Dip
2 lb. Jimmy Dean Hot Sausage
2 chopped onions
2 4 oz. cans chopped green chilies
1 pint sour cream
1 8 oz. cream cheese
4 tomatoes chopped ( Romas work well)
Brown Sausage. Add chopped onions and barely heat. Add chilies, sour cream, cream cheese, and tomatoes and keep warm in a crock pot.

Marshmallow Fondant
1 16 oz. bag marshmallows
2 lb. powdered sugar
2 T. shortening
Grease bowl well with some shortening. Heat marshmallows in microwave in 30 sec. intervals stirring with a greased spatula till soft but not completely melted. ( approx 1:30) Grease bowl and dough hook of Kitchen Aid stand mixer and add marshmallows, shortening and small amts.of powdered sugar till dough forms.(If adding coloring do it now) Knead in any remaining sugar by hand on a greased counter top. Chill at least 30 min. Roll out on Greased counter top.
If it is too hard to roll let sit for a few min. or microwave for about 10 sec. It rolls better the colder it is, so don't get it too warm. If it gets too soft while you are working, just put it back in the fridge for a few min.

1 7 oz. can mushroom pieces
1/2 tsp. Worcestershire sauce
In a 2 qt. saucepan. saute butter and onion until onion becomes transparent. Over low heat, stir in flour to thicken. Add remaining ing. and stir constantly until hot, but not boiling. Serve over baked potatoes.

Friendship Soup
1/2 lb. ground beef
7 C. water
1 tsp. dried (or 1clove fresh) minced garlic
2 T. Beef flavoring
1/4 C. minced onion
1/4 C. green split peas
1/4 C. alphabet macaroni
1/8 C. lentils
1/4 C. barley
1/4 C. elbow/shell macaroni
1/8 C. yellow split peas
1/8 C. curly noodles
Brown ground beef and drain grease. Add water and rest of ingredients and simmer till all ing. are softened @30 min.
* I don't worry too closely about the green/ yellow split peas if you have only one or the other just and both quantities of the same. Also, I just add a few handfuls of whatever leftover noodles are taking up space in the pantry. Be creative!
**This can be given as a prepared "Jar Gift" Just layer the beef flavoring, dried garlic, dried minced onion, green split peas, alphabet macaroni, lentils, barley, shell macaroni, yellow split peas and curly noodles in a clean dry jar and seal tightly with a lid. Cover Lid with a cute piece of fabric and a piece of ribbon to tie this note..." When you feel you are too busy and a meal you need to fix, just get out a kettle, 7 C. of water, 1/2 lb. of hamburger and this mix. Let it cook and simmer slowly while you have your things to do. But when you sit and eat it, remember I LOVE YOU!

2 hard boiled eggs, chopped
1 C. grated cheddar cheese
1 T. chopped green onion
1/4 C. finely diced green pepper
3/4 C. mayonnaise
1 tsp. mustard
Mix mustard and mayonnaise. Add remaining ingredients and mix well. Place scoops of filling on split English muffins and place under preheated broiler for 2-3 min. or until bubbly and golden.

1 can sweetened condensed milk
In saucepan, mix all ing. and bring to a boil. Transfer to a preheated, greased 1 to 2 1/2 qt. slow cooker and set on low heat to serve.
Dip apple chunks, angel food cake, etc.
1/2 C. light corn syrup
1 C. brown sugar (light or dark depending on the darkness of the caramel you like)
